1/2 head cauliflower, cut into florets
1 large parsnip, peeled and cut into pieces
2 cloves garlic
2 cups water
coconut milk
salt and pepper
Put cauliflower florets, parsnip pieces and garlic cloves into a saucepan with water. Bring to boil and cook for about 15 minutes until soft. Drain water from saucepan.
Put cooked vegetables into food processor. Add 1/3 cup coconut milk and salt and pepper to taste. Process about 60 seconds until a smooth purée.
