Carrot, Snow Pea & Ginger Slaw

1/4 wombok (Chinese cabbage), finely shredded
200g snow peas, trimmed, cut into matchsticks
2 carrots, peeled, cut into matchsticks
5cm piece ginger, peeled, cut into matchsticks
2 tablespoons vegetable oil
2 tablespoons fresh lemon juice
1 tablespoon soy sauce


Combine the cabbage, snow pea, carrot and ginger in a bowl.
Whisk the oil, lemon juice and soy sauce in a jug or a bowl until well combined. pour over cabbage mixture and toss to combine.
